Versunkener Apfelkuchen mit Marzipan und Knuspertrick

Der Herbst, der Herbst, der Herbst ist da! Herbst ist eindeutig. Apfelkuchenzeit! Ich habe ein ganz leckeres Rezept für euch. Ich backe diesen Kuchen regelmäßig und er gelingt immer. Er ist schön saftig und schmeckt garantiert.

Ganz besonders saftig und schmackhaft wird dieser Kuchen durch die Marzipanstückchen im Teig. Abgerundet von der Säure der Äpfel und der Zitrone lässt es einem das Wasser im Munde zusammen laufen nach dem ersten Bissen. Und die gehobelten Mandel… alles schmeckt doch gleich noch besser mit Mandeln.

Der Kuchen schmeckt am besten natürlich frisch, dann sind auch die Mandeln noch knackig. Aber auch zwei Tage später kann man sich noch ein Stück zum Frühstück gönnen, falls der Kuchen überhaupt so lange überlebt.

Hier kommt das Rezept für euch:

Versunkener Apfelkuchen mit Marzipan und Knuspertrick

  • 26er oder 28er Springform (je nach gewünschter Höhe des Kuchens)
  • 1 Zitrone
  • 700 g säuerliche Äpfel (z.B. Boskopp)
  • 100 g Marzipan-Rohmasse
  • 200 g weiche Butter
  • 100 g Zucker
  • 1 Pck. Vanillezucker
  • 4 Eier
  • 3 EL Grappa, Calvados oder braunen Rum ((kann auch weggelassen werden))
  • 200 g Mehl
  • 1 TL Backpulver
  • 3 EL gehobelte Mandeln
  • 3 EL Puderzucker
  1. Zitrone waschen, abtrocknen und Schale abreiben. Aus einer Hälfte der Zitrone Zitronensaft pressen. Äpfel schälen, vierteln, entkernen und oben Rillen einritzen, danach mit dem Zitronensaft mischen. Marzipan in kleine Stücke schneiden.

  2. Backofen auf 180 Grad (Umluft 160 Grad) vorheizen. Springform einfetten und einmehlen und/oder mit Backpapier auslegen.

  3. Das war's mit Vorbereitungen. Jetzt geht es an den Teig. Butter in einer Schüssel cremig rühren bis sie heller wird. Zucker, Vanillezucker und abgeriebene Zitronenschalen unterrühren. Nach und nach einzeln die Eier dazurühren, so dass sie gerade so verrührt sind. Anschließend den Alkohol dazugeben.

  4. Mehl und Backpulver mischen und zur Buttercreme geben. Marzipanwürfel unterrühren.

  5. Teig in die Form geben und mit einem Löffel glatt streichen. Äpfel auf den Teig legen und leicht eindrücken.

  6. Kuchen im vorgeheizten Backofen auf der zweite Schiene von unten etwa 40-45 Minuten backen.

  7. Jetzt kommt der Knuspertrick: Grill einschalten. Mandelplättchen und Puderzucker mischen, auf den Kuchen streuen und noch einmal ein paar Minuten in den Ofen stellen. Achtung aufpassen: der Zucker soll schmelzen und karamellisieren, wird aber dann sehr schnell zu dunkel. Unbedingt ein Auge darauf haben und den richtigen Moment zum Rausnehmen abpassen!
